Super Duper Food, Antioxidant, Energy Slice



SO I can totally murder a chocolate brownie but the 5 teaspoons of sugar in each piece kind of puts me off. And I kind of like the idea of protein bars to take the edge off hunger pangs after the gym but quite seriously think that most of them taste like a mix between play dough and kitty litter. So I thought I would make a high protein, high fibre bar which is totally great for you and most importantly doesn't taste like cack. And it came out totally divine. No word of a lie. 

What is so good about this bar, aside from the sent from heaven taste? 

Well, cashew nuts contain  a decent whack of fibre and protein, monounsaturated fats for heart and skin health, copper for antioxidant support and blood health and magnesium, the chill out mineral. Pumpkin and sunflower seeds are powerhouse mineral stores providing zinc for immune and skin health, manganese for antioxidant support and even more magnesium to help you feel a little less irritated when the kids play the recorder. 

As for chia, my favourite little seed gives us a bunch of fibre and protein, essential fatty acids, minerals galore and they don't need to be crushed up like flaxseeds to give you all their benefits. Perfect for a lazybones like me. 

Cacao and cacao nibs are the bizness for making you feel a bit blissed out and for blasting away the free radicals. As are little bluberries which have a pretty amazing antioxidant profile and help support a healthy cardiovascular system. They are also good if you have a touch of the green apple splatters!! 


All in all a high protein, high fibre, full of good fats, full of minerals and antioxidants bar. Perfect for when you want a brownie but don't want a whole bunch of sugary rubbish or need a protein bar hit but don't feel like eating something that tastes like cardboard. 


Whats in it? 

  • 1 cup of cashew nuts 
  • 3/4 cup of pumpkin seeds
  • 1/3 cup of chia seeds
  • 1/3 cup of super seed boost mix ( from Pak n Save)
  • 1/3 cup sunflower seeds
  • 1/3 cup cacao nibs ( I used the sweetened ones!) 
  • 1/4 cup of dessicated coconut 
  • 1/3 cup cacao powder
  • 1 tablespoon of guarana powder (optional, could use coffee?)
  • 1 cup of dates 
  • 1/2 cup dried blueberries
  • 1 tablespoon of vanilla paste 
  • 1 tablespoon of maple syrup or coconut nectar 
  • 1 teaspoon of Himalayan sea salt
  • Extra cacao nibs to sprinkle on top :) 



How do you make it? 

Chuck all the dry ingredients in the food processor and whizz it real good. Then add in the other ingredients until it has a dough like consistency. If it seems a little dry, you can add a little bit of coconut oil but dont overdo it, Im talking about a teaspoon or two. 

Press it all into a slice tray and top with sweetened cacao nibs then put into the fridge to "set"

Voila! 

So I hoovered up way too much of this stuff. In fact I had to take the remainder in for my work buddies to stop me from eating the whole kitten caboodle. Anyhoo. Its luverly and completely moreish so maybe cut into little bite sized bits!
