Bounty bars are a little bit of a guilty pleasure of mine. In fact I think i may have hoovered down at least my body weight in these things over the last decade or so ( body weight may have increased in tandem over this period!)
But lets be honest, they are pretty bad for ya. Not as bad as the ones with the popping candy in them which make you feel like your mouth is having some kind of fit or crunchie bars which you have to dig out of your teeth for the next six hours, but still pretty bad.
So when I saw this more healthy take on the original bounty bar on the gorgeous kiwi blog www.healthyeah.co.nz, I had to give em a roll.
And they are pretty glorious. In fact, my flatmate who has a pretty serious aversion to anything sweet took a whole heap to work and only begrudgingly let me keep any. Not to mention the whole plate which disappeared during my morning meeting with the work crew. So i guess they are pretty good and I know they are super easy to make.
You gotta excuse my presentation. I am always pretty slap happy and I made these before work so i reckon I am excused!
Whats in them?
Bounty Bar
- 1 cup of coconut cream
- 4 tablespoons of coconut oil
- 4 tablespoons of maple syrup or coconut nectar or sugar
- 1 3/4 cups of dessicated coconut
Chocolate coating
- 5 tablespoons of coconut oil or cacao butter
- 3 tablespoons of cacao powder
- 2-3 tablespoons of maple syrup or your choice of sweetener
How to make em?
Mix the coconut oil, cream and sweetener togther in a saucepan and heat over a very low heat until they combine into a creamy cream. This tastes like condensed milk! Yum!
Take off the heat and add the coconut. Mix through and then push into a block on a piece of baking paper and put into the freezer to set.
In the meantime, put the coconut oil or cacao butter in a saucepan and put over a low heat, stir in the cacao powder and the sweetener. Leave it to cool for a fww minutes.
Grab the coconut mixture out of the freezer and cut into bars or circles or stars or whatever your heart desires and then coat in the chocolate mix. Put back onto some baking paper and put back in the freezer to set.
Voila. Doneski.
