Dreamy Vegan Raw Raspberry Creme Filled Chocolate Cupcakes!



So this is my piece de resistance. If I fall off the blogosphere and never blog again, I will still die happy after making and eating these little cakes.

They look like seemingly normal little chocolate cupcakes until you bite into them and get a mouthful of raspberry creamy delight. Just talking about them makes me want to go and make another batch!

So these puppies contain all the usual suspects such as dates, cashews and of course coconut but you could make a million and one variations on the filling and create your very own little masterpiece :)

Whats in them?
 
cupcake base
  • 1 cup of oats or coconut crunch
  • 1 cup of dates
  • 2 tablespoons of cacao powder
  • vanilla extract
 
raspberry filling
 
  • 1 cup of cashews
  • 1/2 punnet of raspberries
  • raspberry powder ( if you have it, otherwise its not essential)
  • juice of a lemon
  • 1/4 cup of water
  • 1-2 tablespoons coconut nectar
  • 1 teaspoon vanilla extract
 
chocolate topping
  • 2 tablespoons of coconut or cacao butter
  • 1 tablespoon of cacao powder
  • 1 tablespoon of agave or coconut nectar
 
How do you do it?
 
cupcake
 
Put the oats in the food processor and blend until they are like a fineish powder. Add the other ingredients and process until it all sticks together. Press it into silicon muffin trays leaving an indentation in the middle for the filling. Put them in the fridge to set.
 
raspberry creme 
 
Whizz all the ingredients until they look like cream. Put a spoonful of the mixture into the cupcake base. Put them back in the fridge.
 
choc top
 
Whizz all the ingredients in the processor until smooth them pour over the top of the cupcake so it resembles icing and completely covers the raspberry crème. Decorate as you wish and put back into the fridge to set.
 
As you can see these look amazing and believe you me, they taste even better. So go get your apron on and get into it!
