Oh my oh my.
I am one lucky girl. So one week I get given a whole heap of gorgeous beetroot and the next week one of my colleagues is literally giving away bags and bags of beautiful plums. I love this bountiful land!
From the rose family, plums are pretty nutritious, high in fibre (meaning good for any toilet or blood sugar troubles) and most importantly, when they are in season they taste heavenly. Nothing like sitting on the trampoline hoing into a sun warmed plum straight from the tree. Yum!
As for chia seeds- well these puppies, from a plant in the mint family, are totally amazing. They are super high in fibre, protein, omega 3, calcium, manganese and phosphorus and are touted as the next big thing for treating blood sugar problems, low energy, weight problems and cardiovascular disease.
And if you didn't know already, if you soak them they taste like sago.

So whats in it?
Crust
- 1/2 cup of almonds
- 1/2 cup of hazelnuts
- 1 cup of desiccated coconut
- 1 cup of medjool dates pitted
- 2 tablespoons of raw cacao powder
Filling
- 1 cup of cashews
- 1 cup of desiccated coconut
- 6 large plums, deseeded
- 4 tablespoons of lemon juice
- 1 tablespoon of vanilla paste
- 1 tablespoon of coconut oil
- 3 tablespoons of chia seeds
How do you make it?
Well people, as are all of my recipes- its as easy as pie
(excuse the pun!)
For the crust throw all the ingredients into the processor and whizz the bejesus out of it until it resembles an oily crumb like consistency. Then press into a spring form pan( what did I ever do without one of these?)
For the filling - whizz the coconut and cashew together first and then add all the other ingredients and process until it looks like a beautiful pink cream. Add in the chia seeds and then pour onto the base.
Chuck into the fridge for an hour or overnight and then cover with sliced plums and leftover hazelnuts.
