Kinda Kooky Coconut Nectarine & Basil Creamy Iceblocks

Nectarines are my hands down my most favourite fruit. Especially those late season ones that are yellow with purple specks that taste like a ray of liquid sunshine.

We used to go to an orchard when i was a kid that sold huge bags of these gorgeous nectarines which we would huff down until our tummies gurgled and the ashtray was stuffed with stones.  I still go past that place.  Its no longer an orchard but I can still see the trees around the back. One day soon I might go knock on their door and ask if I can go pick a few for old times sake.
Anyway, so on the back of the novelty of the new ice cream maker i thought I would make some creamy iceblocks to take round to my main mans for dinner. I had seen a recipe somewhere and thought it might make a nice comboso I whipped these puppies up and they were yum. Probably more of an adult flavour, but you never can tell with some of the kids today!

Full of coconut goodness, nectarines which pack an antioxidant punch and basil which is full of immune and attention stimulating essential oils, you gotta make these for your next BBQ. Did I mention that you can put some moonshine  ( 1/2 cup of vodka) in it if you like but I reckon its better without  


Whats in it?
 
  • 2 cups of  chopped  sweet nectarines
  • 8 tablespoons chopped basil leaves
  • 2 cups of coconut icecream(2 cans of coconut cream, 3 tablespoons of coconut nectar or sugar, teaspoon of vanilla paste) 
 
How do you do it?  
 
 
To make the icecream- cool the coconut cream, add the sweetener and the vanilla and churn in the icecream maker till its like a soft serve consistency.  Put aside in the freezer.
 
Put the nectarines and half the basil in the food processor and blend until smooth. Add the other half of the basil to the mixture and stir through the icecream mixture. ( at this point add the booze if you wanna)
 
Pour into iceblock moulds, chuck in a stick and freeze for at least another 2 hours.
 
Then serve to your adoring fans!
