Vegan Mint Chocolate Chip Icecream Sandwiches!



I actually made this heart shaped icecream sandwich for my darling man as a token of my undying affection. But after bringing it out of the freezer and putting it all together, I just had a wee bite and then another and before I knew it I had demolished the lot. It was 7am. Icecream sandwich for breakfast. Bad naturopath.

Anyway, this puppy tasted amazing (sorry darling)is relatively good for you,as far as desserts go, looks ace and is vegan. What more could you want? Aside from a Maserati of course. And world peace. And a maid. Anyhoo....

So whats in it?
 
Icecream
  • 2 cans of coconut cream- about 800ml
  • 1/4 cup of maple syrup or to taste
  • 2 teaspoons of spirulina or barley/wheatgrass for colour- add more for more intense colour
  • 20 drops of good quality peppermint oil I used absolute essential 
  •  1/2 cup dairy free chocolate chips
 
Sandwich
  • 1 cup of cashews
  • 3/4 cup of dates- I used medjool but drier ones might be better!
  • 2 tablespoons of dessicated coconut
  • 2 tablespoons of maple syrup
  • 3 tablespoons of cacao powder
  • 2 tabelspoons of cacao nibs ( optional) 
 
How do you do it?
 
Icecream
 
Mix all of the ingredients apart from the choc chips together in a bowl, adjust the taste to suit and then put in the fridge for an hour or so to chill. Then pour mixture into your icecream maker and churn, when it starts to get firmer add the choc chips. Transfer to an old icecream container and put in the freezer to firm up a little.
 
 
Sandwiches
 
Put all the ingredients into the food processor and process until it looks like a dough like consistency. Might be a bit sticky. Roll out until its about 2cm thick then use a cutter to cut out your desired shapes. Chuck in the freezer for halfa to firm up.
 
To assemble
 
 
Bring the sandwich bases out of the freezer. Put the cutter back on one of the bases and pack it with icecream on top. Put it back in the freezer for an hour to firm up. Take out of the freezer and slowly take the cutter off to reveal a base and icecream in the same shape. Put a "top" on the sandwich and serve.
