SO I'm a bit of a lime fan. Especially in a cheeky mojito on the deck on a sunny day, but I digress. Limes contribute a gorgeous acidity and floral aroma which is pretty unique. They even have a fairly good whack of vitamin C which is great for everything. And they are pretty amazing in these little sweet and sour pies.
These cute little pies also take full advantage of avocados which are a dime a dozen at the moment and these puppies are so good for you it isn't even funny. Full of good fats, vitamin E, fibre, and more potassium than a banana, these gorgeous fruits are seen to have anti-inflammatory properties, help promote a healthy ticker, beautiful skin, good blood sugar levels and they also taste pretty decent too.
So aside from tasting and looking amazing, these little pies are pretty good for you!
So whats in it?
Crust
1/4 cup macadamia nuts1/2 cup almonds
1/2 cup of dates
pinch of salt
pinch of cayenne pepper
Filling
2 firm avocadosJuice from 3 limes
3 tablespoons of maple syrup
1/2 cup of coconut oil
How do you do it?
Make the crust by blitzing all ingredients in the processor. Press into muffin trays.Make the filling by placing all ingredients back in the clean processor and blitz until smooth and creamy. Spoon mixture into the bases.
Sprinkle lime zest over the little pies and put into the freezer to set for an hour, after which time you can chuck them into the fridge and serve from there.
Voila. So easy, tangy and sweet and pretty gorgeous looking.
