Leftover Friendly Mexican Slaw




Its Christmas day and I find myself in the beautiful Bay of Plenty. Alas its not too beautiful today, in fact the wind is howling and the seating arrangements for an inside only Christmas lunch are looking a little tricky.

The menu is looking gorgeous ( block your ears if you are of the vegetarian persuasion) salmon and salsa verde, glazed ham, freerange stuffed turkey, all manner of desserts (summer fruit bonanza made by moi) and of course salads as far as the eye can see. 

Now usually if you are anything like me you will have a fridge full of half used veges and what better way to use em all up than with a slaw.

This is a bit mexicany cos I am totally addicted to Chipotle which are smoked jalepeno peppers at the moment and they seem to slip into everything I make. They give a gorgeous smoky hot flavour to all dishes and a little pot of them wont set you back more than 3 bucks. A small price to pay for a taste sensation (did I just say that, sheesh)

Jalepeno or peppers dont only add some pep to any dish but they also have lots of health benefits- from clearing up nasal and sinus congetsion to blocking pain receptors, reducing the risk of blood clots and burning fat ( hmmm I think you might need to eat a few) So get into them.

Anyhoo

Whats in it?

Salad

Half a cabbage shredded
Half a red onion chopped (more finely than I could with a back knife and limited skills)
1 carrot grated
1 capsicum grated
3 radishes grated
1 avocado- like a firm one

Dressing

Juice of 4 limes
Slug of olive oil
3 chipotle peppers
salt and pepper


How do you do it?

Its a salad. You chop or grate everything and throw it in a bowl.

For the dressing blitz all the bits together in the trusty processor, then pour over the salad and mix.

Okay, cos I am an omnivore I served this on some pork which I had cooked in cumin seeds, ground coriander, oregano, smoked paprika and cayenne. You could easily cook up some leftover Christmas spoils in this spice mix or have it on its own.

Serve on a tortilla or just on a pretty plate and top with some sour cream and a drizzle of chipotle sauce.
