Raw Vegan Cauliflower Popcorn & Spiced Edamame Beans


Although I often make sweet recipes, I am actually, when it comes down to a bit of a salty chip fiend. I can easily say no to that second piece of cake but I can’t resist a bag of potato chips or a packet of crackers. 

In fact, just the other day, I inhaled a whole packet Kettle Fries while watching Country Calendar ( I am definitely showing my age there)  before I even knew what I was doing.

So I decided I had to make some other form of savoury snack to have rattling round in the cupboard for when I have an attack of the munchies. As I spent a small fortune on my Excalibur dehydrator (which I love dearly) I thought I really should make some dehydrated raw snacks.

The first cab off the rank is the cauliflower popcorn. Cauliflower is cheap as chips at the moment, in fact I got one from Avondale markets for 1.80 this week- score! And this vege packs a pretty impressive nutrient punch, especially for us ladies!  In fact aside from being nutrient dense in general, cauliflower and its mates kale, spinach and broccoli (among others) contain sulphur containing amino acids which aid liver detoxification, in particular they help to promote the excretion of the bad oestrogen metabolites which is pretty handy when you think about all of the conditions which are promoted by oestrogen dominance including fibroids, endometriosis, heavy periods and the dreaded PMS.  

I also made some raw cheezy edamame bean snacks too – now yes, edamame are soy and they are too tainted by controversy about  thyroid  and hormonal disruption so don’t eat them for breakfast lunch and dinner but I’m sure a packet every now and then won’t kill you. In fact they have lots of protein in them and I can attest to the fact that they taste pretty good 

How to make them?

I used a whole cauliflower cut into smallish florets, then in a bowl coat them in olive oil, savoury yeast ( the more the better!) some salt and whatever other spices you like- think cumin, coriander, turmeric, cinnamon, you name it- the world is your oyster!

When coated spread them all on a dehydrator tray and dehydrate at about 46 degrees for 8-10 hours.  Then eat with gay abandon!

It’s the same recipe for the edamame beans!
