Raw vegan chocolate filled creme tarts

Another one of my cyclone lusi creations. I hope it rains every weekend for the rest of the year and then I wont have to feel guilty for staying in and  messing up the kitchen and making my darling fatter!

These are have an oats base, a coconut chocolate centre and can just have a plain coconutty creme top. I just used some strawberry powder and pieces that I had hanging around but you can just go plain or add whatever fruit or spice you would like to the creme.

It doesn't make many, only about 6 muffin sized cupcakes but any more and you might need to get some elastic pants...

Whats in them?
Crust 
  • 1 cup of dates
  • 1 cup of rolled oats 
  • 2 teaspoons of vanilla 
  • 1 teaspoon of cinnamon
Chocolate centre
  • 3 tablespoons of cacao powder
  • 3 tablespoons of coconut oil 
  • 2 tablespoons of maple syrup/coconut nectar/honey 
Creme topping 
  • 1 cup of cashews soaked for a couple of hours 
  • 1/4 cup of coconut cream
  • 1/4 cup of coconut oil
  • 2 tablespoons of maple syrup/coconut nectar/honey

How do you make it? 
  • Pulse together all of the crust ingredients and then press into a muffin tin already oiled with coconut oil
  • Put the cacao powder, coconut oil and maple syrup in a bowl and mix together. Pour into the base mixture and put in the fridge.
  • For the creme topping pulse the cashews in the processor and then slowly add some coconut cream and coconut oil and then add the sweetener.  At this point you can add some fruit powder or cacao or cinnamon or whatever you like. 
Thats it!

Put in the fridge to set for a couple of hours and then you are good to go :)
