In some ways I wish I hadn't made these. I fully anticipated that dehydrated zucchini would taste like cack and wouldn't have a patch on the real fat laden, salty heaven that is good old french fries. But alas I was living in wrongtown.
Now, I may have to buy shares in a zucchini farm or buy a greenhouse for my deck, because I have to eat these everyday. They are like the crack of the vegetable world. Try em once and you are hooked for life.
They are crunchy, cheesy and gorgeous and I think you shouldn't make them because then there may be other people vying for zucchinis at the market. I don't like to brawl in public.
Whats in em?
4 large zucchinis cut into long matchsticks ( I used yellow and green)
5 tablespoons of yeast flakes
1/2 teaspoon of paprika
1/2 teaspoon of cumin
1/2 teaspooon of coriander
1/2 teaspoon of dried oregano
few glugs of olive oil
How to make them?
Cut the zucchini into long matchsticks and put into a large mixing bowl. Pour over the olive oil. Mix together the seasoning and pour over. Massage through with your fingers making sure that the zucchini is covered with the oil/seasoning mixture
Arrange in your dehydrator (you can get a pretty okay one from Briscoes for a hundy. For best results make sure they are not touching each other. Dehydrate at about 45 degrees overnight. If you want to do it a bit quicker and don't care whether it is still deemed raw then crank up the dehydrator to 60.
So like I said, these are heavenly. Don't make them, unless you want to end up in zucchini rehab.
